A blanc de blancs from vines that are over 65 years of age in Avize and Cramant with half blend, made from the grapes from Cramant, aging in oak barrels without any filtration. Both components undergo total malolactic fermentation to soften the edges common to wines from this area. Bottled in May 2010, the wine sat on the lees for five years and received an extra Brut dosage of no more than 4g/l of sugar with a very low level of sulfur dioxide (50mg/l). The bouquet has notes of slate and chalk, lemon and kumquat pulp, algae and a distinct sensation of flint, a classic scent often defined as ‘mineral’. The creamy mouthfeel exalts the unusual fruity flavors of white peach, green apple and Bosc pear along with lingering sensations of sweet citrus and honey that do not affect the pleasing freshness achieved despite a hot and opulent year. The persistence in the finish bolsters the intensity more than the tension of the aftertaste making this an ode to territoriality.
