Spontaneous fermentation. The color is of medium intensity and, as with all the other estate whites of this year, is clear and limpid. What is surprising is the refined and elegant bouquet: cut grass, camomile, rosemary. However, what dominates is the varietal and reoccurring toasted note. The taste is a jolt of lively freshness and if I am incapable of describing it you must believe me when I say that it tastes of rock, stone. The body is a perhaps a little slender but being so balanced it doesn't seem to lack anything.
