Spontaneous fermentation. One could say this is the weakest of the lot. Although the color appears faded what is most striking in the absolute integrity of the color and taste when you consider its age. The taste has a disarming cleanliness and the green scents, spring-like, of white fruit are truly intriguing. Even the bouquet is very nice with a variety of fresh flowers that dominates over a marked spiciness.
