A blend of 85% Vermentino Nero with the rest other authorized local varieties. The vines are for the most part Guyot-trained with a yield of just over 1kg per vine, with the grapes harvested by hand at different times in the various parcels depending on how ripe they are. Indigenous yeasts are used and the grapes ferment in open barriques. The wine ages for sex months in cement vats before being bottled and very little sulfur is used.
The wine has a violet-claret color with a transparency that recalls a young Pinot Noir. The bouquet opens with scents of violets and dark fruit, blueberry in particular, followed immediately by a vegetal note, aromatic herbs from the Mediterranean coast, a delicate nuance of green peppercorn and graphite in the finish. The mouthfeel is saline, mineral and fresh with fine and non-aggressive tannins. The medium body accentuates the wine’s harmony more than its boldness. The wine’s pleasing drinkability makes it perfect for any season and it an even be slightly chilled in summer. A wine with great personality.
It paired very well with the chestnut gnocchi with a white rabbit ragù sauce we had at dinner.
