No wood is used in the aging stage which only takes place in steel vats while natural yeasts are exclusively used in fermentation. The result is a delicious red with a bright ruby color and an intensely fruity bouquet dominated by scents of black cherry. The flavor is fresh, very pleasing, almost salty, and the only risk is that of drinking too much of it, especially when it is served fresh at 14°C and together tagliatelle al ragu or some tasty eggplant Parmesan.
