Disgorged 2009. The color is full, evolved yet luminous and the effervescence is abundant. The bouquet is a burst of yellow flowers, very clean, almost ethereal (very rare in a bubbly), but it maintains it finesse. The mouthfeel is very full with notes of dried red flowers and the finish is full, broad, with a clear note of baked red fruit. The wine has continued to evolve after disgorgement and the base wine is clearly dominated by notes of yeast. A more elegant wine which needs a few minutes in the glass to settle.
