    Made from Grillo grapes and fortified with spirits distilled from the pomace of the same wine without the addition of any must or mistelle (it is after all Vergine). It matures for eight years in large oak barrels and has an amber color with straw-yellow reflections. In the bouquet alternate notes of dried fruit, salt and burned herbs. The mouthfeel is dry, with a soft attack that becomes very dry with a warm, very persistent finish and an aftertaste of dried fruit and salt.

    Drink this cold and serve – even if the winery’s website says otherwise – in small glasses. It is nice to have with almonds, peanuts, olives, pickled vegetables, fish salted and those preserved in oil (anchovies, sardines, mackerel and tuna) as well as bottarga roe and cheese tart.
