Spontaneous fermentation. These are actually are two rosé wines, each very different from the other, produced with grapes from the same vineyard but harvested at different times during the day. In the more ethereal one, the color is a bit spent, the hint of an onion leaf, everything plays on the development of the bouquet, with a very thin taste and a nice acidity. The harvest took place at four in the morning in order to work on cold grapes. This to make it easier to remove the skins so they are not in contact with the most. For the other wine the grapes are harvested at a more reasonable hour and the vinification involves a greater extraction of color, giving the taste a greater boldness at the partial expense of the bouquet. I liked both of them, perhaps the early morning one a little more, but I can understand how for many wine drinkers the thin taste could be a bit puzzling. They are sold in pairs, in cases of 3+3 bottles and only a few hundred were produced.
