Baglio di Pianetto presents its restaurant

Wineries embrace restaurants. For the column “Ristorante Amico” (Friend-restaurant), a wine producer presents one of his favorite restaurants, which in return offers a recipe paired with one of his wines.
The Agrirelais Baglio di Pianetto restaurant is set in a unique location, surrounded by vineyards, in Santa Cristina Gela in the province of Palermo. Here chef Vito Priolo offers outstanding traditional Sicilian dishes, as well as other cuisine.
The kitchen embraces a “zero kilometre” philosophy and all the simple, yet sophisticated dishes reflect a desire to highlight the authentic raw materials, using ingredients bought fresh every day at local markets subject to availability.
The dishes are accompanied by the wines of the nearby estate, which are produced in line with the principles of organic farming by a company that has made sustainability its founding value.
The proposed recipe:
Seared octopus tentacles with thyme on soft potatoes flavoured with sage
Ingredients for 4 people:
1 octopus of about 500 gr, 1 sprig of rosemary, 1 sprig of thyme, 4 boiled potatoes, 1 knob of butter, 100 ml of warm milk, 50 g of Parmesan cheese, Extra Virgin Olive Oil, salt and pepper to taste.
Directions:
Steam the octopus for 1 hr at 100 °C. As soon as it is ready, cut it into pieces and sear it with oil and rosemary.
Take the boiled potatoes and puree them with butter, warm milk, Parmesan cheese and fresh thyme.
Arrange the dish with the puree and octopus pieces, then decorate with aromatic herbs to taste.

Terre Siciliane Baiasyra 2019 Baglio di Pianetto
Onion peel pink hues with peach shades. Inebriating citrussy bouquet mixed with fragrances of fresh fruits as mulberries, figs, pomegranate and nectarines. Roses notes stand out as indication of its finesse and elegance. On the palate the pomegranates notes come forward, closing up with a delightful mineral hue. Tasteful, silky and persistent. Great freshness.
The name recalls the fascinating bay in the bordering village Marzamemi, where at the sunset (“sira” in sicilian dialect) the sky turns red.
Production area: The vineyards of the estate are located at Contrada Baroni in Noto (SR) on a mix of sand and limestone soil.
Grape variety: Syrah 100% grown in cordon spur 8/10 buds and with a yearld per hectare of about 9 tons.
Harvest: Handpicking, August and September
Vinification: Grapes are collected in small cases and then transported to the winery for another bunch selection. Destemming and pressing follows immediately to drain off the free juice – “il Fiore”, the best juice – in steel tanks, where it ferments for 3 weeks at low temperatures.
Serving temperature: 10-12°C
Recommended food pairings: Ideal for charcuterie, pasta dishes with vegetables, white meat, stewed or backed in foil seafood. Perfect also with pizza.
