Radicchio salad with arugula, salmon trout, orange and PDO Fontina

Insalata di radicchio con rucola, trota salmonata, arancia e Fontina DOP con Collio Sauvignon 2021 Ronco Blanchis

A fresh, particular and all-in-ones salad that we pair with a Collio Sauvignon 2021 Ronco Blanchis.

Ingredients for 4 people:

250g Fontina cheese, 2 heads of Verona radicchio, 80g arugula, 200g smoked salmon trout, 2 and a half oranges, extra-virgin olive oil, balsamic vinegar, salt and pepper and pumpkin seeds (optional).

Directions:

Remove the cores from the radicchio heads, cut them into thin slices, wash and blend them in a mixer. Wash and blend the arugula as well.

Peel the 2 whole oranges and cut them into pieces around 2cm in size.

Break up the salmon trout, removing any residual bones, and make strips about 3-4 long.

Cut the rind from the Fontina and cut it into sticks. Use a salad bowl to mix together the radicchio, arugula, salmon trout, fontina and oranges.

Squeeze the remaining half orange and blend it with 40ml of EVOO, 4 tablespoons of balsamic vinegar, salt and pepper. Use this dressing to season the salad and serve.

To make the salad a little crunchier, sprinkle a healthy spoonful of pumpkin seeds.

Collio Sauvignon 2021 Ronco Blanchis

Sauvignon is an international grape variety, which can be found in many Italian regions. In Collio it is perfectly settled and characterized. This straw-green colored Sauvignon has varietal aromas of elderberry and cedar, with intense fruity hints. To the palate, it is rich and ripe and it highlights its land of origin with fullness, freshness and roundness.

Production area: the hill (Ronco) of Blanchis in Collio - province of Gorizia - formed by Eocene marls.

Grape varieties: 100% Sauvignon, Guyot training system, with 4830 vines per hectare.

Harvest: 10th of September with a yield of 6.5 t/ha.

Vinification: soft pressing of the whole grape, not destemmed, vinification in stainless steel tanks. The following refinement takes place in steel for 7 months. 

Alcoholic content: 14% Vol.

Serving temperature: 10-12°C.

Suggested food pairings: Starters in general, raw ham, seafood and seafood sauces.
