Potato ring with aromatic herbs

More than a side dish, this is a main course that can be followed by a nice, mixed salad. We pair it with a Colosi Sicilia Grillo Selezione Flora.
Ingredients for 4 people:
500g potatoes, 100g béchamel, 100g grated Parmigiano Reggiano, salt and pepper, extra-virgin olive oil as needed and aromatic herbs of choice.
Directions:
Boil the potatoes with their skins in salted water for 15 minutes. Let the potatoes cool and then cut them into slices without removing the skins.
Grease a Bundt pan and place the potato slices around the circle. Cover them with the béchamel, Parmigiano Reggiano, a trickle of EVOO, abundant pepper and aromatic herbs.
Bake for 15-20 minutes at 200°C, until the top has a golden color.

Grillo Sicilia Doc 2020 Cantine Colosi
Deep straw yellow color. To the nose, together with varietal hints, emerges a vanilla-flavored aroma due to the maturation in acacia wood that can be found also in the pleasant round taste.
Production area: Marsala (TP), sandy-clay ground.
Grape variety: Grillo 100%, "alberello" (goblet) and espalier trained.
Harvest: in the second half of September.
Vinification: soft press of the grapes, fermentation and ageing in stainless steel for 3 months. Maturation 4 months in Acacia barrels.
Alcoholic content: 13% vol.
Serving temperature: 10-12°C.
Suggested food pairing: side dishes and vegetables, Timballi and light fried food.
