Cold Kamarino tomato soup

Zuppa fredda di pomodori kamarino Sicilia Rosé 2019 Planeta

A quick and very easy dish perfect for the upcoming hot weather that we pair with Rosé Sicilia DOC 2019 Planeta.

Ingredients for 4 people:

500g red Kamarino salad tomatoes, 100g red peppers, 1 garlic clove, 10g mint, 2g marjoram, green tabasco as desired, salt as desired, 30g extra-virgin olive oil, 100g fennel, 20g sour cream and basil for garnish.

Directions:

Use a mixer to purée and blend together the EVOO, salt, mint, garlic, peppers and marjoram. Cut the fennel julienne-style and sauté in pan.

Pour the soup into a bowl and decorate with the sour cream, sautéed fennel, basil, croutons and EVOO.

Serve with toasted bread.

Sicilia Rosé 2019 Planeta

Pale pink, delicate and inviting. On the nose, typically floral, also notes of white peach and melon with hints of strawberry and blood orange. On the palate it is fresh, just peppery (white pepper) and fruity, a classic wine easy to drink.

Production area: Menfi, in Tenuta Ulmo, where the story of Planeta family began. The vineyard is the Dispensa, with soil of medium depth, moderately limey with mixed yellow and grey chalk, moderately fine texture, few stones present.

Grape varieties: 50% Nero d'Avola, 50% Syrah trained in spurred cordon with a density of 4500 vines per hectare.

Harvest: Syrah 28 August and Nero d'Avola 4-5 September.

Wine making: after harvest, a vinification similar to that of white wines takes place: destalking and sent to soft pressing for a brief maceration of 1-2 hours to achieve a perfect extraction of color; the must thus obtained, after decanting, is transferred and fermented at 15°C in stainless steel vats. Bottling is in the first half of January. 

Alcohol content: 12.5% vol.

Serving temperature: 12°C.

Suggested food pairings: suitable as an aperitif with any snack or in combination with tapas, raw fish, fresh salads or alone with seasonal fruit. Also good with seafood and fried vegetables, tempura or sushi.
