Let us now come to Prosecco, the Superiore Docg one, that is, the hilly one from Valdobbiadene-Conegliano or Asolo, which is more linked to the territory. The quality is undoubtedly higher than Prosecco Doc, generally produced in the plains and simpler. 

And we have arrived at the "most loved by Italians" (as a well-known cookery advertisement used to say), at least judging by the numbers. But more than the numbers perhaps the language spoken matters, for which Prosecco is now synonymous with Italian sparkling wine. Which generates no little confusion when, asking for a Prosecco for an aperitif, anything comes as long as it has bubbles, but on the other hand it says a lot about the speed with which this brand has established itself.

Some numbers: the Prosecco world speaks of more than half a billion bottles for the Doc one, something more than 100 million for the Conegliano Valdobbiadene one and about 18 million for Asolo. A reality that towers at the top of national wine production and has established itself in the world, an all-Italian pride (or all-Veneto, if you will, with the addition for the Doc area, since 2009, of a large portion of Friuli Venezia Giulia).

It is produced for at least 85 percent from Glera grapes, an ancient semi-aromatic vine, with the Charmat or Martinotti method, more or less long, also known as the Italian method, that is, that of refermentation in autoclave.
