Vincent Dauvissat: simply grand

Vincent Dauvissat’s Chablis are juicy and elegant when young with remarkable propensity to age.
Domaine Vincent Dauvissat, 14 hectares of vineyards for a production of some 80,000 bottles a year, needs no introduction. For many years it has been one of the reigning gods of the Chablis appellation along with Domaine Ravenau. The reason for such a distinction is easily said: these are wines with a distinctive style, impeccably made and with a pure and crystalline purity.
Vincent began working at the estate with his father in 1976 and since 1988 has been personally in charge of the domaine, which since 2002 has been managed according to biodynamic methods. Considering the area, the vineyard yields are very low, producing around 50 hectoliters per hectare. The wine is traditionally fermented and matured, in part in stainless steel and in part in wood, the latter in a discreet way in order not to compromise the freshness, definition and personality of these true gems. Fermentation is spontaneous and no clarification or paddling are employed.
Vincent’s Chablis are juicy and elegant when young with a remarkable propensity to age. Vintage 2017 is very limited quantity-wise but very lovely and pure in regard to quality. The only painful drawback is that the wines of this domaine, which come out of the winery at more than honest prices, have become the target of speculation and thus difficult to come by.

The bold structure has amazing volume but is surprisingly fresh and balanced with a taut and vibrant progression and an impetuous, very long and salty finish.
