The typicity of Grand Selezione Vigna Paronza

Chianti Classico Gran Selezione Vigna Paronza from Casale dello Sparviero is made from Sangiovese from a single vineyard and is the utmost expression of its terroir.
The estate is in Castellina in Chianti and is quite large, some 380 hectares of which 90 are vineyards. It is situated in a Benedictine monastery where, according to legend, sparrow hawks used to make their nests, hence the name.
Here they primarily produce red wines and Vigna Paronza is a Chianti Classico Grand Selezione made with Sangiovese from a single vineyard that has a density of between 3,800 and 6.500 root stocks per hectare. The wine is aged in barriques for the first year or so and then in barrels of traditional sizes.
The estate also offers hospitality in an important holiday farm.
