Vulcaia is a 100% fermented-in-wood Sauvignon in which the grape has been ‘tamed’ by the volcanic earth and the use of wood in order to underscore its opulence and its bold fruit component, rather than its classic assorted vegetal notes. A total of 26,000 bottles a year are made of this wine that undergoes pellicular maceration and is fermented in barriques that have been strongly charred, 30% of them new wood. The wine then ages in steel for six months before being bottled. The wine has an excellent, concentrated and bright golden-yellow color, while the nose is extraordinarily intense, broad and elegant. Aromas of apricot, mango, citrus, wisteria and rosemary interweave to create a net that also captures notes of roast coffee and vanilla stick. The flavor mirrors all this with a mouthfeel that is warmly soft yet nicely counterbalanced by freshness and upheld by the light tannic note from the barriques. This is a wine that wonderfully harmonizes the toasted notes with a long and tasty persistence.
