Made with only Canaiolo grapes that are locally referred to as ‘merla’. The grapes raisinate on shelves for around 30 days before fermenting in stainless steel and aging in large barrels and steel vats. The wine has a dark, shiny and consistent red color and a succession of sumptuous and deep, impeccably defined aromas. The bouquet is an endless parade of notes of peat, kerosene, dark tobacco, leather and roasted chestnuts all on a practically solid bed of cherry. The attack of the mouthfeel is sweet and very fruity before the wine changes face and becomes at first dry and balsamic (resin) at the center of the mouth, with biting yet juicy tannins, before closing very austere with notes of slate and petroleum. The acidic limits typical of the grape are obviated by a volatility that upholds mouthfeel without drying it out or making it rustic. An extraordinary ‘sweet-not sweet’ red wine, as Veronelli would have said, that all wine lovers should taste.
