    A blend of 80% Chardonnay and 20% Sorbara that is soft pressed after the grapes are hand-picked using baskets between the end of September and the beginning of October. The first-pressing must is fermented under controlled temperatures and is followed by secondary fermentation in the bottle sur lattes at a constant temperature for some 24 months before it is disgorged. The wine has a luminous, golden color and an inviting aromatic profile of orange blossoms and linden, wild mint, fresh lemon, yellow fruit that is slightly tropical and notes of maritime pines. The mouthfeel is straightforward and flavorful with a thirst-quenching freshness.
