While 2005 was a difficult year and Vintage Ployez-Jacquemart came out as a blanc de blancs given that Chardonnay suffered less. The grapes came from the Premier and Grand Cru villages of Cuis, Cramant, Oger, Mesnil-sur-Oger, Bisseuil, Tauxieres and, obviously, Ludes. The Champagne aged for four years on the lees and another two in the cellar before reaching the market. The aromatic profile is citrusy, delicately fruity and floral with notes of tangerine, pink grapefruit and currant, mint and anise with a veil of honey and white pepper. These sensations are also found in the mouthfeel that is structured and flavorful. It progresses with a refreshing balsamic intensity towards a taut and precise finish that also has a fruity crispiness.
