The first year of this Blanc de Blancs was produced in 1992 and since then it has been made only in excellent years. The wine is made using only chardonnay grapes from the estate’s vineyards, between West Sussex and Hampshire, and sits on the lees for 72 months before being disgorged with a brut dosage of 10.5g/l. In the glass it has a bright, greenish-straw color with an essential and clean aroma with notes of white flowers, elder, lemon and bergamot, Granny Smith apple peel and crispy white peach with light iodine and sweet nuances. The mouthfeel is fresh and citrusy with a fine and light effervescence and a nice texture even though the distinct acidity gives this a British touch.
