The grapes are selected by hand and are destemmed but not pressed and are left to macerate in cement vats. After racking, the must continues to ferment in cement and the wine is bottled without being filtered or clarified.
The wine has a slightly veiled yet very vital mustard-yellow color and the aroma has amazing frankness and personality. The bouquet has notes of salt, capers, dried apricot, moss, figs, bread and a touch of sweet tobacco. And while the aromas are enchanting, thanks also to the volatile acidity kept under control which keeps them from being rustic, the mouthfeel is outstanding. It has a sweet-salt attack and this continues in the flavor with the sweetness of apricot and the saltiness of capers preserved in salt, a dialectic that distinguishes the whole flavor. The finish is deeply fruity with distinct notes of sweet tobacco and fennel. The wine is slightly sparking but the carbonation can be compared to Cindy Crawford’s famous beauty mark.
