This is made from only Pinot Noir grapes from vineyards in Provaglio and the whole bunches are soft-pressed in order to obtain a free-run must, 80% of which is fermented in stainless steel and the remaining 20% in tonneaux before aging in the bottle for 30 months. This produces a pale copper color with a nice thick and creamy bead. The aroma is strong but elegantly fruity, a cross between crunchy apple, raspberry and the vitality of orange peel that in the end become a confit. The flavor has order and rhythm yet is almost enigmatic with its citrus freshness, seductive notes of karkadè flower and spice, a perfectionist minerality and a body making it just right to serve at the table, while the finish is dense and full of harmony and closes on tones of an iodine saltiness.
