Made from only “Pinot Blanc Vrai”, traditionally the authentic Pinot Blanc of southern Champagne. The vines have an average age of 30 years and a low yield and the wine is made in stainless steel vats and undergoes malolactic fermentation before sitting for around 36 months on the lees. It receives a dosage of 3-4g/l and is not sent to market until six months after disgorgement, in this case April 2016. In the glass the wine has a bright, white-golden color and a delicate bouquet of white fruit pulp, William’s pear and golden delicious apple, white tea, elder and yeast with nuances of country leaves and a pleasing wild note. The pronounced mouthfeel has slightly saline hints that serve as a counterpoint to the extracts and freshness, all in a rich yet measured framework with a nice fruity aftertaste.
