A blend of the white grapes with 40% Chardonnay, 30% Arbanne and 30% Petit Meslier that matured some five years on the lees and then aged long in the bottle after it was disgorged, in October 2015, without any sugar dosage. The name Sablé, in fact,refers to the sugar dosage to trigger secondary fermentation which in this case resulted in giving the wine an atmospheric pressure of four rather than the classic six, and thus the effervescence is more delicate.
The wine has a straw-yellow color with bright, golden reflections and a subtle and creamy effervescence while the bouquet has a fresh and floral harmony with notes of citrus like tangerine and bergamot, as well as those of linden honey and white tea. The mouthfeel is lively and joyous, with notes of jasmine and elder syrup and a pleasing, vibrant tension with sensations of aromatic herbs like laurel and lemon thyme, to then close with a vibrant aromatic note of candied ginger, crispy apricot and citron, while the aftertaste is of fresh and chalky grapefruit with hints of salt.
