A blend of all the Lambrusco variations grown in the vineyards with secondary fermentation in the bottle using the Ancestral Method. The wine is neither filtered nor clarified with the use of sulfur dioxide kept to a minimum by using indigenous yeasts. It has a thick yet not impenetrable color with a lovely and vivacious effervescence. Like all wines that undergo secondary fermentation in the bottle, there is some reduction when the bottle is opened and thus it needs to breathe. The wait is rewarded by exuberant aromas of Marasca and Durone di Vignola cherries and a lovely and joyous grapiness. The mouthfeel is taut, very fresh and bracing with an impact that goes with any meal, be in Emiliano cuisine or that of other regions and this because this is a wine that is universal as few wines can be.
