A wine made using the ‘traditional’ method of secondary fermentation in the bottle, which is locally referred to as the ‘ancestral’ method that has in many cases been replaced by more modern ones. Although other estates produce similar wines, Fondatore remains a point of reference and a milestone. It has a clear red color, as a wine made from the Sorbara variety should, with captivating and intense aromas and scents of underbrush, currant and raspberry, almost recalling the mist of Cote de Nuits. Here, however, there is an effervescence that is never invasive yet is still abundant, controlled and stimulating. The mouthfeel is fresh and clean, joyous and so pleasing it can be paired with and exalt any dish from the local cuisine. An aristocratic wine that has a ‘democratic’ soul that allows it to please with its timeless, universal flavor.
