The Chardonnay grapes here undergo a soft pressing, one called coeur de cuvée, and then 40% ferments in barriques before aging on the lees for at least 36 months. In the glass it has a rich and creamy foam and a thick bead on a white-gold color. The aroma is fresh and inviting with notes of white flowers, grapefruit and fresh almond, with nuances of butter and pastry. The mouthfeel is rich yet extremely balanced with an almost siliceous minerality and an agility from a citrusy freshness that lasts throughout the finish.
