Capo Zefiro is the realization of a dream of three childhood friends – Francesco Isola, Giuseppe Vottari and Cosimo Canturi – who pooled their individual expertise in order to bring back two of Italy’s oldest and rarest wines: Greco di Bianco and Mantonico di Bianco. This Passito is made from only Greco Bianco grapes that raisinate for ten days and, after fermentation, age for 12 months in steel and three months in wood.
The wine is a great sensorial experience with its lucent color between amber and topaz, while the aroma is a sophisticated and ethereal bouquet of candied and dry fruits, orange blossom, barley candy and a touch of sage with light, evolved nuances. The mouthfeel is a perfect balance between sweetness and freshness, not at all cloying with plenty of body and length.
