(Harvest between September 20 and 25, bottled in June 2005, disgorged October 2015, dosage 2.5g/l). This was the first vintage to hit the market as an extra-brut bubbly and is perhaps the most Trentino-esque of all the magnums at the tasting, with its bouquet distinguished by notes of hay and aromatic herbs. The late harvest and long wait for the grapes to ripen resulted in the use of wood to create harmony and structure to the palate. Initially it is a bit rough and rigid, with a personality exalted by the low dosage and a finish that seems almost tannic with its delicately vegetal notes. This has many years ahead of it and over time it will become velvety and elegant whereas now the finish has a timid graphite sensation that is almost smoky.
