A young and sparkling wine that must be served cold and is perfect as an aperitif and as a summer wine. It is made with only Ortrugo grapes that undergo cold maceration and ferment with natural yeasts at controlled temperatures while the effervescence is created using an autoclave. The wine has a delicate, yellow-green color and a small, silky and persistent effervescence. The aroma has delicate scents of citrus, citron, Granny Smith apple and white flowers, especially hawthorn. The mouthfeel is fresh, saline and slightly almond-like.
This is a wine that pairs well with traditional cured meats from the Emilia region and simple white pizza. It is also excellent with Asian dishes.
