Beyond the Clouds 2008

This is a mostly Chardonnay cuvée with the addition of some Gewürztraminer, Pinot Bianco and Sauvignon. After fermentation the wine undergoes weekly batonnage for three months to give it great finesse and obtain all the grapes have to give. The wine then matures in French barriques for ten months before aging for six months in the bottle ahead of going on sale.

Despite being ten years old, this wine still has a very youthful, intense and bright canary yellow color. The wood is present in the bouquet but does not overpower the light smoky aromas and notes of mint and exotic fruit. The mouthfeel is dense and warm but this is mitigated by a great freshness that perfectly conserves it and allows for an impressive persistence. A great bottle truly at its best!
