Casal Cervino 2011

Made from Cesanese di Affile grapes, the wine ages for a year in both barrels and steel and then for another year in the bottle. It has an intense, ruby-garnet color with clear fruity aromas with notes of sour cherry and blackberry. The mouthfeel is full-bodied, distinct, agile, saline and slightly tannic with a nice persistence. The wine should be served at 16°C and paired with stewed chicken with peppers, saltimbocca alla Romana and grilled mutton.
