The Pisoni family, who have been making wines for ages, apparently arrived in Trentino in Roman times. The first records of their winemaking activities date back to 1852, when they were producing wines and grappas in the Piana del Sarca, between the Toblino and Cavedone lakes. They were one of the first to use the traditional method in Trentino. Only a few thousands bottles of bubbly are produced a year and the grapes are grown according to organic and bio-dynamic methods in a limy-sandy soil. Only Chardonnay grapes are used which are fermented and age in steel, sitting over 24 months on the lees.
The wine has a fine bead and a bold straw-yellow color. The bouquet is a spectrum of clean and articulated aromas that range from tangerine to almond, white melon to mulberry, sea pine to cookies and pane carasau. The first sip is quite intriguing with its caressing bubbles that usher in an acidic streak and a lovely and elegant mouthfeel, agile and continuously creamy. In the finish there is a slight touch of pink grapefruit and eucalyptus with a long persistence.
