Made with only Chardonnay grapes from the village of Chouilly of which 70% are from the lieu-dit Les Partelaines. The name refers to the passage of sheep that in the past left wool on the branches of the trees. This bottle is based on the 2011 harvest with some 20% composed of vin de reserve. It is fermented in stainless steel and ages on the lees for around 36 months, before receiving a dosage of 6.75g/l of sugar. The wine has a delicate floral bouquet of small, white flowers, scents of verbena and chamomile and a subtle butter note veiling those of peach and white melon. The mouthfeel is sprightly and fine with notes of citrus and fresh almond and a finish of pungent lemon jam that gives it a nice persistence.
