This blanc de blancs was made with Chardonnay from a single parcel situated in the lieux-dits of Champ Caïn, on the hills in the Grand Cru village of Avize in Côte des Blancs, and was disgorged in February 2015. It fermented for some nine months in large wood vats with frequent paddling and was bottled in May 2006 without filtration or clarification. The wine was given an Extra Brut dosage of 2.5g/l and this choice of administering a low dosage has become a trademark of the wines from this small Maison in Dizy.
A Champagne with a clear and chiseled profile, an expression of Chardonnay from a chalky soil, vital and with iodine sensations. The aroma has a distinct citrusy tension and an almost mentholated and balsamic clarity, together with a floral note of elder. The pulpy fruit component is of crunchy apple and unripe pineapple, while grated ginger and fine aromatic herbs complete the bouquet. The mouthfeel is tense and precise, dynamically energetic, dry and yet boldly textured, with the freshness of lime and grapefruit accompanied by a note of almond with a veil of butter. Flavorful to the point of becoming very persistent in its aromatic purity.
