From Frantoio 60%, Pisciottana 30%, Rotondella 10% olive varieties. Continuous cycle production system. Medium fruity. It has a beautiful intense limpid golden yellow color with delicate green hues. Its aroma is ample and rotund, endowed with vegetal notes of artichoke, wild chicory and lettuce, together with fragrant hints of mint, rosemary and sage. Its taste is elegant and complex, enriched by notes of wild thistle, black pepper and almond. Bitterness is distinct and pungency is definite and complimentary.
