Its aroma is full and rotund, rich in fragrant hints of mint, rosemary and sage, together with spicy hints of black pepper and a distinct note of freshly mown grass and almond. Its taste is fine and complex, with a vegetal flavor of artichoke, chicory and lettuce. Bitterness is strong and pungency is distinct.
