Restaurant 19 94: A star in the future

Restaurant 19 94 in Padova: Three young guys, everyone with its professionality together for a project of great ambition and quality.
The 19 94 restaurant opened its doors only a few months ago but it has already become a reference point for quality food in Padua. It is a modern establishment in the city’s Santo Stefano neighborhood and its success is thanks above all to Chef Stefano Agostini, whose long career includes winning a Michelin star at Case Vecie in Albano Terme, and the young Friuli entrepreneur Alessandro Rotolo, the son of Emilio, the owner of the wine estates Volpe Pasini and Sciopetto. The dining room is supervised by Maître Filippo Caporello.
This is a Champions’ League restaurant team that already has its sights on a Michelin star in the future and perhaps even more than one. The décor is very lovely, essential, and the fare adheres to Agostini’s style, based on local prime ingredients and a technical approach focused on intelligent pairings and cooking methods. The result is a very interesting menu, dishes created in a modern way by a great professional. The tasting menu of the month is as follows: algae salad, crumbles, avocado and vinaigrette, scampi, zucchini julienne, a yellow pepper sorbet with an anise fumet, fresh pasta bottoncini (buttons) with patina and purple potatoes, zucchini and zucchini flower purée, pigeon, Saturn peaches, hazelnut and summer black truffle sauce, assortment of cheeses and a 19:94 cake. I added snails with a vegetable ragout and they were outstanding.
The wine list was amazing and from the son of a winemaker one would not expect anything less. It includes wines from around the world with particular attention paid to those from Veneto, Friuli and Piedmont but also Burgundy and Champagne, all offered at reasonable prices.
The price of the tasting menu is 78 euros while an a la carte dinner runs around 85 euros. The wine pairings, one for each course, costs 40 euros. It is easy to foresee a Michelin star in this restaurant’s future as well as a popular success but if you go there now you can say, in a few years’ time, that you were among those who discovered it.
The name 19 94 refers to the year Case Vecie opened and it is also Alessandro’s birthday. Two dates that unite the plead players in this adventure.
