Pasticceria Macioce: the sweet heart of Alvito

In the province of Frosinone, the Macioce family, starting with Uncle Vittorio's old recipes, offers delicacies that are an ode to taste and the great Italian pastry tradition.
Once upon a time, in a small village in the Comino Valley behind the Latium mountains looking towards Abruzzo, in the early 1900s, there was a child, fatherless. Vittorio Macioce his name and, as was usual in those years, soon began working to help his family support itself. Those were hard years between the wars just about everywhere, but Don Pasquale Di Tullio, owner of the bakery of the same name where Vittorio worked soon noticed the skills of this little man with a petite physique but a keen and lively gaze and offered him the chance to specialize at the LaTour bakery that served the royal household, on Via Cola di Rienzo in Rome.
Imagine this young boy, alone and maybe even a little scared, leaving for the Capital with many dreams in his head and his home in his heart. In the LaTour pastry shop Vittorio makes a "discovery": chocolate. The processing of chocolates, tempering, covering bon bons...and he is thunderstruck. After a few years, back in Alvito, his small town, he takes this treasure of knowledge with him and gives a new look to the typical sweet of the area: soft nougat made of royal pastry.
Thus began a small revolution, the sweet treat of eighteenth-century origin made of almond paste made with sugar, water and refined almonds, processed until a soft mixture is obtained and baked for several hours in a bain-marie, enriched with fragrant candied fruit is dressed by Vittorio Macioce with a thin, crunchy layer of dark chocolate and is immediately a success. Vittorio continued for years to work in Don Pasquale's pastry shop even after the change of ownership until in 1986 Paola Macioce, Vittorio's niece, decided to open her own pastry shop with her sister-in-law Virginia Pica and with the invaluable support of Uncle Vittorio. Thus began a new challenge and through the study of old recipes Pasticceria Macioce was finally born.
More than ninety years have passed since Vittorio as a young boy left for Rome, and today in Alvito Uncle Vittorio's will, dedication and stubbornness is still carried on by Paola and Virginia and their three grandchildren Elisabetta, Eleonora and Michele. This is a beautiful and sweet example of what craftsmanship combined with all-Italian ingenuity can do, this is a bastion of goodness strong in the experience, passion and obsessive attention to detail that runs in the DNA of this family.
The recipes for the chocolates have now been enriched, the imagination and taste of the women of the house leading the way: we find alongside the classic Torrone Regina (royal pastry with added pine nuts and covered in dark chocolate), nougats with coffee royal pastry, hazelnuts from Piedmont Igp, pistachios from Bronte, bergamot and among the latest additions, that with ratafia.
All the processing is done artisanally,each ingredient selected from carefully chosen producers, each step executed as if it were the chisel of a cameo, every single nougat is packaged by hand with quick and precise fingers. In short, an ode to taste and the great Italian pastry tradition. Along with nougats in the store there are also sour cherry tarts, apple shortbread bundles, brioche for breakfast, and on Sundays even some savory rustic pastries. These are the stories we should continually look to, this is the will and dedication we should all be inspired by.
