A golden color and an ivory-white, compact vaporous head. The aroma is intense and vegetal, balsamic, mentholated and citrusy with hints of aromatic herbs brought out by the hops used. The mouthfeel is fresh with a lively yet subtle carbonation and has a delicate bitterness that is nicely balanced in the flavor. The aftertaste is consistent with the flavor and is direct, persistent and balsamic from the mint with a tad of citrus at the end.

This pairs well with a classic mentucciata but also goes well with uova in trippa (an omelet cut into strips served in a tomato sauce with Roman mint and pecorino cheese).
