The ale has an intense golden color with luminous and gingery reflections while the head is white, compact and almost creamy. The bold and articulated aroma is initially fruity with scents of yellow peach, papaya, mango, citrus, and dried apricot which are then followed by those of yeast, bread crust and pastry together with pungent pepper notes and delicate toffee ones. The flavor is consistent with the aroma and the mouthfeel has a subtle and persistent carbonation. All this makes the brew soft, almost sweet, with extremely delicate bitter sensations as well as a pleasing with silky structure. The finish is of pastries.
A brew to certainly pair with cheese with a rind like camembert d’Isigny but it could also hold up well with a classic tarte tatin.
