The beer has a golden color with a white and dense head. The aroma is initially floral with notes of wisteria and acacia followed by ‘green’ heather tones and nuances of savory. The finish is citrusy and ginger spicy with notes of malt and grain. The mouthfeel is fresh, not just balanced but calibrated in a truly pleasing sweet-bitter synergy. The after-aromas are those of malt with hints of honey and evolved floral sensations while the finish is dry and bitter with an exemplary cleanliness.
To be paired with a traditional Irish dish of colcannon, which is made of mashed potatoes, cabbage and milk, or with borfadei, a Bergamo and autumnal soup made the day before with milk, squash and polenta.
