Casa alle Vacche, Vernaccia for everyone

The Vernaccia di San Gimignano by Casa alle Vacche is a persistent and attractive wine, ideal for a light lunch.
As is clear by its name, this estate began in the 19th century as one to raise livestock, as well as cultivate olives and grapes that were then sold to the locals. In 1980, they began to produce wine which was followed by a restructuring of the estate to include a restaurant and offer hospitality with a pool.
The area of Pancole is known for winegrowing. The whole family is involved in winemaking but it is Lorenzo Ciappi who handles the farming side. The wines have a classic imprint and are made in stainless steel except for the Reserve, for which the grapes ferment in part in tonneau barrels. The enologist consultant is Paolo Salvi, a talented and serious professional who in recent years has allowed the estate to make a leap in quality.
