It is a typical Tuscan olive variety, from which Il Cavallino farm produces its often awarded Extra Virgin Olive Oil Special Edition.

The family Salvadori come from Montescudaio, a little hilly village near Cecina seaside (Tuscany), where woods, vineyards and olive groves adorn the landscape. Over the years the olive groves have grown, some have been renovated, others are century-old.

Today Romina Salvadori is still linked to her roots in Montescudaio, where the olives crushed in the family oil mill ripen, but she also runs 55 hectares with 16,000 trees in the countryside of Bibbona. In the last harvest 4,960 quintals of olives and about 755 hectolitres of oil were produced.

The production includes several kind of Evo oil: the Classico, the Igp, the Organic, the Gran Selezione. We present the Special Edition.
