Bubbles in the sun

During an aperitif at home with friends who love Sicily we had a wine that I had not had for a while that for an instant, here in the grips of winter, brought on a desire for the sun and a blue horizon.
The wine came from the historic estate of Marco De Bartoli, in Marsala, and was both curious and unusual. It had nothing to do with Marsala the wine but was a ‘terza via’ (third way) to use the Grillo grape with Renato De Bortoli coming up with the original idea of making a bubbly with it. The result is a truly unusual traditional method sparkling wine created to represent this grape and the land it is from without any filtering.
