Made with only Mavrud grapes from vineyards the estate owns in a semi-continental area which has a soil favorable for this varietal. Mavrud is a very old local variety that was cultivated in ancient Thrace. Today it is for the most part cultivated around Plovdiv, in the hills of the Rodopi mountains. The wine macerates on the skins for four days and is then made using select yeasts under controlled temperatures.
The wine has a very deep yet luminous ruby-red color and the impact of the aroma is complex and intense with notes of wild cherry, ripe blackberry and juniper berry along with a mentholated hint in the background and a pleasing sensation of sweet spice. The mouthfeel is meaty, upheld by a nice acidity and a pleasing dryness. The finish is elegant, long and persistent.
Ideal with traditional Bulgarian cold cut and aged cheeses.
