A well-defined production philosophy linked to the Val di Cembra where the vines are pergola trained Trentino-style, while a strict winemaking method always entails malolactic fermentation. There is no dosage and only Pinot Noir grapes are used with fermentation in stainless steel after which the wine sits 36 months on the lees. The wine has a fresh, slightly austere aroma with a note of crunchy apple, white pepper and ground ginger. The flavor is a bit grapey and the mouthfeel is dominated by a bold, almost pungent acidity.
