This Tridentium is a whole different story. A blend of Chardonnay (80%) and Pinot Noir (20%) grapes that come only from the most adapt vineyards in the classic Trento DOC area. Pressed softly in huge Marmonnier presses, fermentation and malolactic fermentation are in part in steel vats and in part in wood of various ages and sizes. It is pressed in April, the tirage is in June and it ages 48 months on the lees.
The color in the glass is a distinct and crystal-clear straw-yellow. The aroma is complex, deep and vertical with fragrant scents of white flowers, exotic fruit and white pulp, aromatic herbs and yeast. This is repeated in the mouth and is enriched with a pleasing and zesty freshness. Soft and typical of the Trentino terroir.
