Made from Palomino grapes and fortified with distilled wine, this is initially aged on the lees for eight years in American barriques filled to the brim and then another 22 years in barrels using the Solera Method. The wine has an amber color with golden reflections and clear and pungent aromas of burnt wood, spirits, walnuts and salt. The attack of the mouthfeel is very dry, broad and warm to then unleash an almost violent and burning sapidity with rancio notes. The finish is exquisite, dry and bitter with an aftertaste of dried fruit and burnt wood.
Drink this cold and paired with prosciutto, cheese and fish with sauce. It is also outstanding with a porcini mushroom velouté, truly on the level of Sauternes and foie gras.
The price is not cheap, around 65 euros, but this is a masterpiece. Import to Italy by Meregalli.
