Made with only Chardonnay from 19 parcels in the Grand Cru village of Le Mesnil. The grapes from the relatively warm 2006 harvest had an unusually rich and generous profile and were surprisingly more ready than the more austere 2004 one. The wine was made in stainless steel without any malolactic fermentation and matured for 10 years on the lees in the Le Mesnil cellars, after which it is disgorged with an extra-brut sugar dosage of 5g/l. The aromatic profile has notes of face powder and citrus, Annurca apple and bread crust, white pepper and an intense streak of oyster with a light smokiness. After a little while in the glass new scents emerge with nuances of laurel, linden honey, mallow, Earl Grey tea, barley and candied ginger. The vertical and iodine mouthfeel has a saline persistence with the freshness of grapefruit and an almost balsamic streak. While already enjoyable, the acidity and texture of this Champagne indicate it will evolve with age. Those who have been lucky to taste an aged Salon know that it is well-worth the wait to fully enjoy its splendor.
